So yesterday, I got brave and decided to try cooking one of John Berardi’s recipes, all by my big self
We bought some filets of fresh salmon at the store a few days ago, and I didn’t want them to go bad. I didn’t start eating salmon until a few years ago, as well as shrimp. The funny thing about it, is that I grew up in a costal town! Go figure….
Anyhow, I managed to make something brilliant, and ate the entire thing myself.
Sesame, ginger, and cayenne pepper coated salmon breasts:
All I had to do, was first sprinkle both sides of the filets with a little bit of salt, cayenne pepper (I used chilli powder and lots of it… rumour has it, this helps boost your metabolism) and then smash each filet into a plate full of sesame seeds. Then, I took a tablespoon of fresh ginger (I buy it in a tube so I don’t have to screw around with cutting it, etc…….. I also do that for chilli paste, as well as garlic) paste, and stir fried it with a tablespoon of olive oil (even though the recipe called for peanut oil…. I didn’t have any so I improvised). Then, after the ginger got brown, it calls for searing the salmon filets on each side for about 2.5 minutes. Well, I cooked mine for about 5 on each side because the thought of uncooked salmon hitting my tongue, doesn’t sit well with me.
It was to die for. I’m quite pleased with myself. If I can cook it, ANYONE can cook it-
